Cooking Happy 3/5

Last week we celebrated a big moment in our home!  For the past 3 years my husband has been enrolled in part-time studies... while working full-time, while running his own part-time side business, while being awesome.  Last week he wrote his last exam of his bachelor's degree, what up?!?!  There are a few more courses he has to complete before receiving his accounting designation but let's get real, we are STOKED.  Cake was in order guys, but not just any cake, BEER cake.  My husband is a beer enthusiast and way back in September I stumbled upon this recipe for Guinness Chocolate Cake that had his name all over it.  When life gives you reason to celebrate, make cake!  I'm so proud of my husband.  Perseverance and determination is the name of his game and when the load gets intense (i.e. when I would've freaked out long ago) he keeps a cool head, buckles down, and gets to work.

I followed the recipe to a T except I cut the amount of sugar in half and nixed the icing.  The cake turned out moist, delish, and it was a great treat.  Make it.  It is good.

Congratulations! I highly approve of your method of celebration as well...we love Chocolate Guinness Cake! We've made it for St. Patrick's Day the past few years and usually one or two other times during the year.
