Nap-time Meals

While we're on the salmon train, we might as well continue, yes?  I think so.  Fish cooks quick, and that is a winner in my books.  This supper literally took 15 minutes to prepare from start to finish.  While the salmon is poaching, I could assemble the lemon dill sauce and a quick salad.  The sauce definitely turned out quite rich but it was a nice contrast against the light fish.  Lemon and dill goes so well with salmon, I must say.

Poached Salmon with a Lemon-Dill Cream Sauce

Poaching fish is pretty easy.  If you need some help, say hello to Google or browse this.

Lemon-Dill Cream Sauce:

*2 Tb. butter
*1 1/2 cups of heavy cream (I cut it with a little bit of milk)
*1 Tb. seedy Dijon mustard
*2 Tb. dill
*3 Tb. all-purpose flour
*many squirts of lemon juice
*fresh ground pepper

Melt butter in a small saucepan and briskly stir in the flour.  Reduce heat and slowly add the heavy cream, stirring constantly until the white sauce reaches your desired thickness.  Add Dijon mustard, dill, lemon juice, and fresh ground pepper to taste.

Easy?  Easy.
