nap-time meals
This has got to be the easiest meal to assemble. Seriously? Seriously. I made this one a lot when I was maneuvering through the "let's figure out this breast-feeding thing". Arden would leave with me on the couch and return with me on the couch - after multiple episodes of Jamie Oliver, a shower, and MAYBE supper in the oven. Those were the early days with Zoey.
Baked Salmon with Pesto
*I wish I could give credit where credit is due, but this seriously started out as a chicken recipe I found on the internet and I've tweaked it so much it doesn't even resemble the original.*
Ingredients:
*2 salmon fillets (I know fresh is best but those frozen highliner fillets you can find at Superstore work in a pinch)
*a couple squirts of lemon juice (yes this is how I measure)
*2 tomatoes diced
*a couple TB. of pesto
*fresh Parmesan cheese
*salt and pepper to season
Basically, starting with the pesto, pile it all on top of the salmon and bake at 400 degrees for 15-20 minutes or so. This is a perfect recipe to add or subtract from. Today, I added capers, because I had them in the house. I've also added peppers or fresh parsley. Whatev. Go nuts.
Steam some rice, throw together a salad, nurse the baby, and you're ready for supper!
