Need a simple summery salad to accompany your BBQ? This is for you. It is bright, fresh and again has minimal ingredients to cut down on prep-time.

My Go-To Summer Pasta Salad

{serves 5 as a side-dish}

1 lemon, juiced (I also used the zest and tossed it in as well)
1/4 cup extra virgin olive oil
3 Tb. of white balsamic vinegar
1-2 cloves of garlic, minced.
1/4 cup of freshly grated Romano cheese
Salt and Pepper to taste

*Roast about 5-8 stalks of asparagus (I broke them apart to about 1 inch bite size pieces beforehand)
*1 1/2 cups of cherry tomatoes quartered
*1 cup of fresh parsley, diced.

Cook 1 375g bag of whole wheat pasta (I used Rotini) according to package directions. Drain and set aside to cool. Refrigerate until you are ready to assemble and dress the salad.
