Little Fingers.

I had help in the kitchen this evening. This little one kept me on my toes as my smart husband helped her Mom with accounting homework. We drew pictures, played guitar, and made muffins. I think she warmed up to me by the end of the night even if she did growl at me a couple times. No really, she did. Literally. Thankfully, there was no biting. Oh to get inside the head of a two year old.

I present you with the easiest muffin recipe on the planet. All compliments go to my sister for passing on such a keeper! When baking with whole grains I always have troubles keeping the end result moist. The orange and yogurt added just that and a natural sweetness. So go ahead and make some, because they're good for you. We can all use a little goodness in our lives.

Muffin Goodness

*stir these 5 ingredients together in a bowl:
1/2 cup ground flax seed
3/4 cup bran
1 cup whole wheat flour
1 tsp. baking powder
1/2 tsp. baking soda

*then blend these 5 ingredients together in a blender:
1 orange (quartered and seeded)
1/2 cup brown sugar (I only had honey on hand, and they still turned out fabulous)
1/4 oil
1 egg
1/2 yogurt

*add to the dry ingredients

*then add 1 cup raisins, dates, or chopped nuts (I only had dried cranberries which worked well)

*bake in greased muffin tins at 375 for 17-20min.
