Mmm good.

I've been browsing cookbooks and websites for a recipe that screams "Holiday Breakfast!" I've never been a fan of candied fruit cakes or hot cross buns which seem to be everywhere at Christmas time.

At the bakery I've been won over with their use of feta cheese in morning pastries. A good Greek Salad is to die for but seriously, feta in pastry is the next best thing to sliced bread.

I finally combined a couple recipes and came up with this:
Apple, cranberry, feta scones.

Made with whole wheat flour and sweetened with honey, apple sauce, and ample amounts of cinnamon, nutmeg, and ground cloves.

Turned out pretty moist and deeeeeelish I must say.

I've never considered myself too much of a baker but this whole bakery gig in the mornings is turning out pretty sweet. I've never met a group of people more excited about bready, doughy goodness. I can dig it.

We are having my Mom and Dad-in laws as overnight guests this weekend so I think I may warm up those little scones in the oven Saturday morning for a delightful breakfast... That is, if they last that long.
